One-plate meal:
* Shrimp and Cauliflower Baguette Sandwich
* Onion and Bacon Consomme Soup

Ingredients (Shrimp and Cauliflower Baguette Sandwich)

Baguette – 7-8 cm
Cauliflower – 30g
Shrimp – 2
Cheese – 1 slice
Olive oil – Suitable amounts
Garlic – 2-3cm
Dried basil – 1/2 teaspoon
Salt & pepper – To taste

How To Cook (Shrimp and Cauliflower Baguette Sandwich)

Step 1: Slice the baguette into halves. Cut the cauliflower into little bunches and place into a microwaveable bowl. Cover with clingwrap and microwave at 500w for 1 minutes. Shell the shrimp and rub in potato starch dissolved in water.

Step 2: Heat the olive oil in a frying pan, then fry the shrimps. Once the shrimps have turned red, add in cauliflower, garlic and dried basil. Add salt and pepper to taste.

Step 3: Place the sliced cheese onto the bottom half of the baguette, followed by the cooked shrimp and cauliflower. Place both halves of the baguette into a toaster to melt the cheese.

Step 4: Serve with slices of kiwi, apple and cherry tomato as shown.

Ingredients (Onion and Bacon Consomme Soup)

Onion – 1/8 (about 30g)
Bacon – 1/2 slice
Spinach – 3 leaves
Water – 200ml
White wine – 1 tablespoon
Consomme – 1/2 teaspoon
Salt & pepper – To taste

How To Cook (Onion and Bacon Consomme Soup)

Step 1: Cut the onion and bacon into 1cm long strips, and the spinach leaves into 3cm wide strips.

Step 2: Boil the water in a pot, then add the onion and bacon. Once the water has boiled, add the spinach leaves and white wine, and cook on low heat for 3 minutes.

Step 3: Add consomme to the pot and stir. Add salt and pepper to taste.

Step 4: Serve with slices of kiwi, apple and cherry tomato as shown.
